Beetroot and Apple Salad - TM Recipe in the Bellini!


Today i'm posting my favourite recipe to date!  I had this made for me at a Thermomix demo and I absolutely can't get enough of this salad!  If you have never eaten raw beetroot - I highly recommend you give this recipe a try.....so fresh, tangy and healthy.  Give it a go... super easy!

I didn't really follow the TM recipe exactly (I didn't weigh anything) and you don't need to either.  As long as you have all of the ingredients listed, you can add as much or a little as you like - depending on your taste.  So here's what I did:

1 Bunch of fresh baby beets, peeled and halved (my bunch had about 6-8)
1 granny smith apple, seeded and quartered (skin on)
1/2 medium red onion, halved
1 large carrot, peeled and cut into thirds
Handfull of Corriander (leaves and stems) (add to your preferred taste)
Juice of 1 lemon
Pinch of Salt
Dash of olive oil (about 3 tablespoons)

Put all ingredients in the Bellini bowl, except for the corriander.  Put on speed 5 for 5 seconds.
Add corriander and pulse 3-5 times until salad is at the desired consistency.
... and that's it! 

Most refreshing salad i've EVER eaten!

  2. I love that salad! I cooked mashed potatoe today, I put the potatoes in the basket and filled with water, steamed veggies on top and when they were cooked emptied water out of jug put the potatoes, milk and butter in and gave them a quick whizz, they were fantastic!

    1. Yum. How did you cook the potatoes? Did you use the butterfly attachment? How long did they take?. Great idea...cooking potato in the jug and steaming the rest of your veggies.

    2. I just followed the Bellini recipe on YouTube for rice and veggies. The potatoes took about 20-25 minutes and i did add extra water half way through when I popped the veggies in the steamer part. I didn't use the butterfly but I wanted the potatoe and sweet potatoe to really mix together so I whizzed it between 8-10 sec on speed 6.
